MICHELIN Guide 2027 has arrived: Meet the Philippines’ new culinary icons

The Philippines’ dining scene has entered another glittering chapter.

On October 29, the MICHELIN Guide unveiled its 2027 selection during an awards ceremony at the Manila Marriott Hotel, Newport World Resorts, bringing together some of the country’s most celebrated chefs, restaurateurs and culinary talents.

This year’s selection spans 127 establishments across Metro Manila, Cavite, Pampanga and Cebu, up from 108 recognized establishments in the previous edition.

The 2027 guide includes one Two MICHELIN Star restaurant, nine One MICHELIN Star restaurants, 31 Bib Gourmand establishments, and 86 MICHELIN Selected restaurants. Four individuals also received special awards celebrating service, emerging culinary talent, cocktails, and a standout new opening.

Behind every distinction is a familiar standard. MICHELIN inspectors evaluate restaurants according to five universal criteria: the quality of ingredients, mastery of cooking techniques, harmony of flavors, the personality of the cuisine, and consistency.
